Macadamia Nut Crusted Halibut
As a Chef of a restaurant, you strive to make food special and memorable. The ultimate goal is to create a dish that your guests continue to come back for...that one signature item that hits a home run!
There is always experimentation; trial and error. I always like to work with ingredients and products that tantalize my taste buds. To put it simply, I love fish. So, I started creating recipes that would highlight the texture and flavor of one of my all time favorites; halibut. Little did I know 12 years ago, that coating the fish with chopped macadamia nuts, roasting to perfection in the wood burning oven, and pairing it with a smooth lemon butter sauce would create the phenomenon that we now know as Wildfire's signature Macadamia Nut Crusted Halibut!
Wildfire recently partnered up with Shedd Aquarium's "Rite Bite Program", which promotes sustainable seafood choices. By sustainable, this means abundant, well-managed and caught or farmed in environmentally friendly ways and halibut falls under this category. Our halibut comes from a 20-40 pound fish and is line caught in Alaska from the end of March until mid-November - when you are sure to find halibut on our specials card!
