Designed to showcase the bright flavors of summer, each course is thoughtfully matched with a handcrafted cocktail that enhances the ingredients on every plate. Throughout the evening, Brad Wermager, Wildfire’s Director of Wine & Spirits, will guide guests through each pairing, sharing the inspiration behind the cocktails and explaining how each selection complements the menu.

A Four-Course Summer Menu with Handcrafted Cocktail Pairings

The evening begins with two seasonal appetizers paired with the refreshing flavors of an Aperol Spritz:

• Peach Bruschetta with whipped ricotta and balsamic glaze

• Grilled Tuscan Prosciutto-Wrapped Shrimp with Calabrian chili aioli

For the first course, enjoy perfectly grilled Swordfish served with fresh lemon, basil, mint, and orzo pasta, accompanied by a crisp Fresh Lime Daiquiri.

The main course features Peppercorn-Crusted Beef Tenderloin served with roasted rosemary potatoes and rich bordelaise sauce, paired with a refreshing Blackberry Mint Julep that balances the bold flavors of the dish.

To finish the evening, indulge in a Strawberry-Lemon Curd Tart with a buttery shortbread crust, complemented by a bright and refreshing Strawberry Smash.
