Chef Joe Decker Shares the Inspiration Behind Wildfire’s Fruit Pies

Wildfire Executive Chef Joe Decker explains the passion behind the restaurant’s summer pie program:

“This is the time of year I look forward to most, when the Midwest offers an abundance of fresh, beautiful fruit. Our fresh-baked fruit pies reflect both my love of baking and my ‘less is more’ philosophy—letting each ingredient truly shine. In May, we welcome vibrant strawberries into our Triple Berry Pie, bursting with the flavor of freshly picked fruit. June brings our Strawberry Rhubarb Pie, where sweet and tart come together perfectly beneath a crunchy oat streusel topping. When our sons were younger, we made trips to Michigan to pick blueberries—memories I still cherish. That same appreciation for simplicity comes through in our July Blueberry Pie, when the berries are at their peak and can stand beautifully on their own. By late July and early August, we’re using the freshest, juiciest local peaches for our Pure Peach Pie—every bite full of bright, natural flavor. And as summer winds down, September apples arrive, lifting my spirits with our Apple Streusel Pie, rich with cinnamon, brown sugar, and perfectly caramelized apples.”
