Designed for craft beer enthusiasts and adventurous food lovers alike, this exclusive four-course dinner celebrates the vibrant flavors of Mexican cuisine with expertly selected beer pairings. Each course has been thoughtfully created to complement the unique characteristics of its accompanying beer, creating a dining experience that’s as educational as it is delicious.

Throughout the evening, Wildfire Service Manager Sam Dalton will guide guests through each pairing, sharing what makes every combination work so well and offering insight into the featured Mexican beers.

A Four-Course Menu Inspired by Mexican Flavors

Your evening begins with two flavorful appetizers paired with the crisp, refreshing taste of Pacífico Clara:

• Mexican Street Corn Croquettes with fresh corn, cotija cheese, and spicy lime cream sauce
• Shrimp & Vegetable Fundido served with tortilla chips

The first course features Al Pastor Pulpo Tacos, complete with grilled octopus, pineapple, avocado salsa, and mango-jícama salad, perfectly complemented by Dos Equis Lager Especial.

For the main course, enjoy rich and savory Quesabirrias made with slow-cooked short ribs, cilantro, onions, lime, tomatillo salsa, and a traditional consommé, paired with Bohemia Clásica.

To finish the evening on a sweet note, indulge in a Gansito Cupcake featuring vanilla cake, strawberry filling, fresh whipped cream, and chocolate ganache alongside the smooth, malt-forward flavors of Modelo Negra.
